Air–Water Interface Assembly of Protein Nanofibrils Promoted by Hydrophobic Additives

Herein we demonstrate a novel way of modifying the colloidal stability proteins by presence hydrophobic molecules. A protein capable self-assembly into nanofibrils (PNFs) is milled with molecular material. Upon dissolution in acidic water followed heating, are converted PNFs containing dyes. When aqueous dispersions such heated, films formed at air–water interface. The contain ordered, optically anisotropic domains, and shape reaction vessel can influence PNF packing. We generality process employing derived from three bovine insulin (INS), ?-lactoglobulin (BLG), hen egg white lysozyme (HEWL) combination dyes ?-sexithiophene (6T) 4-(dicyanomethylene)-2-methyl-6-(4-dimethylaminostyryl)-4H-pyran (DCM). As individual dye molecules oriented along long axis, whole ensembles become aligned and, as result, display emission polarized light. Moreover, case stained DCM, stimulated demonstrated.
